You have probably heard about this spice a lot among Ghanaians and popularly in West African cuisines. This spice blend is the heart of Ghanaian grilling and one can not simply grill or barbecue without using our loved chichinga spice powder.
Most people have their own recipe but here is the basic recipe that you will find in all the others as well. The secret to this spice is, peanut powder but if you are allergic to peanuts, simply swap with ground almond, cashew or any preferred ground nuts.
Enjoy this recipe and adjust to suit your taste buds.
1/2 cup of peanut powder
2tbs ginger powder
2tbs powdered pepper
1tsp garlic powder
1tsp onion powder
1/2 – 1tsp salt
Method of preparation
Add all the ingredients into a blender or food processor and blend
Pass it through a mesh strainer
It’s ready to use. You can store in an air tight container inside or outside a refrigerator for months.
You can use it on your khebabs after grilling or add some to your fresh spices to marinate any meat or fish before grilling.
