100g Cream cheese kept in room temperature. laughing cow cream cheese works best for this recipe
1/2 teaspoon Salt You may not need the salt if using salted butter

Ayigbe biscuit; a popular Ghanaian street snacks that originates from the Volta region of Ghana and enjoyed mostly on the streets of Ghana as a snack or dessert.

Pre-heat oven to 175° or gas mark 3.

In a bowl, add in all ingredients and mix with hand until crumbly but not too crumbly. You can bits of water to help hold dough together of it too crumbly.

Scoop some of the dough into your hand and press firmly to shape a ball.

With the help of the other hand, slightly press the dough together to flatten it and place on a lined baking tray. With a fork, lightly press down on top of the dough to make lines.

Repeat process until dough if finished. Make about 12 biscuits.
Bake in a 175° heated oven for 30 minutes.

Do keep an eye on the biscuits when baking as different oven works with their own heating capacities. You might need to bake for lesser time if using the gas oven.
Enjoy with some chilled Ghanaian chocolate drink.
